Fried quail the state bird of California was both juicy and crispy, while sweet onions and pecorino provided additional depth of flavor. As the ribs are browned, brush them generously with the glaze. There's a lot of personal stories about the chefs and what led them to cook the way they do, which I thought was nice, though a bit too long at times. The pictures are great and reveal that plating these dishes is a work of art in itself.
An early positive review from a major food magazine naming State Bird Provisions as the best new restaurant in America pushed them from a neighborhood startup to a must-visit destination restaurant. The photographs that are included look great. There are only a few that I might be able to attempt. There's full dishes, but also drinks, and even more basic staples like butter and jam. Transfer the ribs to a platter and sprinkle with the shichimi togarashi and scallions.
The majority of the recipes look like they would be beyond the abilities of most home cooks. In a small bowl, stir together the cornstarch and water until smooth. Eggnog ice cream was delicious, particularly with the soft cookie, chocolate and almonds. The story of how the restaurant came to be is fascinating as well.
Each recipe This is a really multi-faceted book. You might have to wait a bit, but the counter offers a front-row view of kitchen operations and first pick of any dish before it makes its way onto the cart or into the dining room. The State Bird Provisions, the cookbook, offers a visually stunning look at some of the dishes Stuart Brioza and Nicole Krasinski offer at their San Francisco restaurant of the same name. Oil the grill grates or add enough oil to the grill pan or skillet to very thinly cover the surface.
It was fun and interesting to read the stories about how the restaurant came about and how they came up with some of the dishes to serve. Once I read the explanation it makes sense. And even then they were experimenting with the menu and creating their space in San Francisco. Give State Bird Provisions the book to the foodies in your life.
